That is probably the fault of the baker, not a custom of the organization. In the academy where I worked there was a baker who made the most delicious bread.

Dennis,

I think you may be a bit confused concerning the topic of bread baking.

Since salt tends to kill yeast if the two come in contact or you put in to much salt, less salt simply means increased activity of the yeast...and...all the more alcohol produced. And, any good bread baker knows that once the bread cools off the alcohol is long gone.

My good SDA mother did teach me that is was a sin to eat bread fresh out of the oven because of the alcohol I might ‘accidently’ consume. All the SDA cooks in my family were great bread makers.

P.S.

You need to try my whole wheat pecan bread fresh out of the oven with real butter and honey on it.

I just lost 30 lbs by using a high-protein, low-carb diet. It took me 16 weeks. I never felt deprived, except right at the beginning for a three days, when I had very low amounts of carbs. But I was eating much larger amounts of lean animal protein than I was accustomed to eating. I was really enjoying the hamburger patties, as I hadn't eaten any beef for many years. But my diet center told me, "The more beef you eat, the more you lose." And I did! I lost five pounds in the first three days alone and then the rest came off at the rate of about 2.5 pounds per week.

The huge thing, though, is that, not only am I enjoying my new slimness, but I FEEL so much better!!!! I just turned 60 and I thought all the aches and pains I was having were just old age. But now I know they were caused by not enough protein!

Hec and Phil,

Actually Dennis is correct, in that EGW did say that in order to eat bread, it must be baked twice and/or completely dried so that no moisture remains. She also forbade any use of baking soda or baking powder.

Well, I guess we weren't very good Adventist. But then, most of my family were meat eating farmers who lived close to the land.

What I do find odd, is that even after leaving the Adventist church, since we lived in the Napa Valley, we would often go to the PUC bakery for bread and such. Their baked goods were great, nothing like you described.

Apparently, the PUC bakery is more liberal (smile) than the UC bakery in following traditional SDA breadmaking recipes. The bread and rolls at Union College have been very dry for many years despite having different bakers. Remember the "zweiback" (German word meaning baked twice) biscuits that were served at the Battle Creek Sanitarium and sometimes broke the delicate dentures of the patients? Zweiback biscuits were primarily an early Adventist invention (some health food stores still sell a version of it). Dr. John Kellogg's dry cereal flakes later replaced the tough, dry grain biscuits at the Battle Creek Sanitarium. Yes, Ellen White strongly recommended dry, crisp bread.

PS: Since the UC Golden Cords bakery sells some of their products occasionally in area food markets, its dryness gives the bread a longer shelf life being that it contains no preservatives. This is good economics until the customer doesn't buy another loaf of dry bread or asks the store for a refund.

Is it true that soda causes inflamation of the stomach? if so, why do people mix baking soda with lemon juice when they have stomach problems? It acts as an AlkaSeltzer.

I'm sorry you're still suffering with that Animal. It's at times like this that I'm thankful God looks on our insides and not our outsides (though sometimes I wish he'd hurry up about healing the outsides!). Hang in there!

I'm so sorry, Animal. Have you look into the funds that hospitals have for cases that cannot pay? I know that Florida Hospital has such funds.
